Vanilla Ice Cream, Lime Panna Cotta & Shiso + Kaffir Gin Pineapple

Winter or summer, it doesn’t matter, everyone loves ice cream. But some of us don’t want just any ice cream; we want something special, something homemade that you’ll never forget. To make that possible, Martijn van der Zwan has shared his incredible recipe with us. Thank you so much, Martijn!

Vanilla Ice Cream, Lime Panna Cotta & Shiso + Kaffir Gin Pineapple

Here are the recipes:

🍨 For de ice cream
1 vanilla pod
385 ml whole milk
25 g milk powder
0.5 g salt
85 g sugar
40 g heavy cream
55 g egg yolk
10 g dextrose

Instructions:
Heat all ingredients to 85°C, then cool down and let it rest for 6–12 hours. Afterward, churn it into ice cream.
(Tip: To save time, you can always buy your favorite vanilla ice cream instead.)

🍍 For the Pineapple

Sous Vide Method:
Peel the pineapple, cut it into quarters, and remove the core. Vacuum-seal it with 45–50 ml Shiso + Kaffir gin and, optionally, 1 or 2 lime leaves. Cook for 1 hour at 75°C.

Alternative Method (No Sous Vide):
Peel the pineapple, cut it into quarters, and remove the core. Place the pineapple pieces in an oven dish. Add 45–50 ml Shiso + Kaffir gin and optionally 1 or 2 lime leaves. Cover tightly with aluminum foil. Bake in a preheated oven at 75°C for about 1 hour.

🫕 For the Panna Cotta
250 g heavy cream
75 g sugar
1.5 sheets of gelatin
Zest of 1/2 lime
1 lime leaf

Instructions:
Bring the cream and sugar to a boil with the lime zest and lime leaf. Dissolve the soaked gelatin in the mixture. Let it cool slightly, then pour it into the desired mold.

To Serve:
Scoop the ice cream into a dessert bowl, top it with the pineapple, and finish with the panna cotta. Enjoy this unforgettable dessert!
